We're diving into the world of Keto Royal Icing. Yes, you read that right, royal icing that's low carb and keto-friendly. Get ready to impress your friends and family with your sugar-free decorating skills!
Ingredients
- 1 cup of powdered sweetener
- 1 egg white
- 1/2 tsp of flavoured extract (vanilla, almond, etc. You can also use lemon juice)
- 2.5 tsp of water
- 1-2 tsp of Tapioca flour (we use tapioca flour but you can use coconut flour or even cocoa as an alternative)
Method:
- Mix together all of your ingredients with a whisk until everything comes together and is very smooth. About 2 minutes.
- Separate your icing into 3 different bowls and add your food colouring of choice. You can also use freeze dried fruits as natural colour. In the bakery we use freeze dried strawberries that we blend up in the processor until it's about dust consistency. This makes fabulous red and pinks that taste great!
- Can be stored in an air tight container in the fridge for up to a month.
