Are you a pasta lover trying to cut down on carbs? Look no further! Keto pasta is here to save the day (and your waistline)! But what exactly is this magical creation, and how can you enjoy it without feeling like you're missing out on the real deal?

Prep Time: 40 min
Cook Time: 3 minutes

Ingredients:

  • 1/2 cup almond flour
  • 1 tsp xanthan gum
  • 1/2 tsp salt
  • 4 egg yolks
  • 1/2 tsp garlic powder (optional)

Steps:

  • Wisk eggs till pale colour
  • Add remaining ingredients until well mixed
  • Let rest for 20 minutes
  • Roll out pasta with a pasta maker
  • Boil for 3 minutes

Keto Pasta Notes:

  • After you mix in your ingredients and your mixture is still running, don't add more flour. It will take time for the xanthan gum to activate. Keep mixing and it will thicken up. A dough ball should form after 5-7 minutes. Take your ball and knead it on the counter or flat surface to really incorporate everything.
  • If the dough is still sticky at this point, then add a tablespoon of coconut flour at a time.
  • This recipe makes one serving. Upscale accordingly.
