Keto Easter Sugar Cookies

Are you ready to hop into the Easter spirit with some delicious treats? Look no further than these Keto Easter Sugar Cookies! These low-carb goodies are perfect for satisfying your sweet tooth without straying from your keto lifestyle. Plus, they are so cute that even the Easter Bunny himself would approve!

INGREDIENTS:

  • 100 grams of almond flour
  • 40 grams of coconut flour
  • 1 tsp of baking powder
  • 1/2 tsp of xanthan gum
  • 25-50 grams of sweetener
    (depending how sweet you like it)
  • dash of salt
  • 100 grams of butter
  • 50 grams of cream cheese
  • 1 egg

DIRECTIONS:

  1. Put everything into a food processor and blitz together into a big ball of dough. If using this method use cold butter and cream cheese. If you don’t have a food processor use softened cream cheese and butter and mix by a hand mixer. Once all mixed place into fridge for 10 - 15 minutes.
  2. Roll cold dough out between 2 pieces of baking paper. You want your dough about 1/2 inch thick. Can use cut out shapes or cut into log like pieces.
  3. Cook at 160°C fan forced for 5-6 minutes.
  4. Dough will seem not fully cooked. Leave on hot tray for additional five minutes as cookies will continue to set. Can dust with powdered sweetener or icing.
  5. Enjoy!

IF YOUR COOKIES STICK TO YOUR BAKING SHEET LINE THEM WITH BAKING PAPER BEFORE PUTTING THE COOKIES ON THEM.
