These low-carb goodies are perfect for satisfying your sweet tooth without straying from your keto lifestyle. Plus, they are so cute that even the Easter Bunny himself would approve!
INGREDIENTS:
- 100 grams of almond flour
- 40 grams of coconut flour
- 1 tsp of baking powder
- 1/2 tsp of xanthan gum
- 25-50 grams of sweetener
(depending how sweet you like it) - dash of salt
- 100 grams of butter
- 50 grams of cream cheese
- 1 egg
DIRECTIONS:
- Put everything into a food processor and blitz together into a big ball of dough. If using this method use cold butter and cream cheese. If you don’t have a food processor use softened cream cheese and butter and mix by a hand mixer. Once all mixed place into fridge for 10 - 15 minutes.
- Roll cold dough out between 2 pieces of baking paper. You want your dough about 1/2 inch thick. Can use cut out shapes or cut into log like pieces.
- Cook at 160°C fan forced for 5-6 minutes.
- Dough will seem not fully cooked. Leave on hot tray for additional five minutes as cookies will continue to set. Can dust with powdered sweetener or icing.
