So, what exactly is faux potato salad? Well, it's a sneaky little dish that looks like traditional potato salad but packs a surprising twist. Instead of using potatoes, this recipe calls for a surprising substitute that will have your taste buds doing a happy dance.
INGREDIENTS
- 5-7 cauliflower florets
- 1/4 cup of mayo
- 2 boiled eggs
- dash of salt and pepper
- 1 squirt of mustard
- green onion or shallots (optional)
- fried bacon pieces (optional)
INSTRUCTIONS
- Peel, cut and boil your cauliflower until the pieces are very soft. About 12-15 minutes
- Drain and set aside for at least 5 minutes. Really letting the water drain from the veggie.
- Boil your eggs. Tip: throw in a dash of bit carb and dash of salt for easy egg peeling. Once boiled slice eggs and add into a bowl with your swede or cauliflower
- Add remaining ingredients and gently mix your faux salad together!
- Makes 2 serves. I usually make a bigger batch and triple the ingredients.
